    Champagne scientists get to the bottom of bubble puzzle  Sep 30, 2009
    A team led by Gerard Liger-Belair, a University of Reims chemical physics professor, studied what happened when sparkling wine bubbles exploded. Comparing the turmoil witnessed raging above the champagne glass with the fury of the sea, they noted how a ''myriad of ascending bubbles collapse and radiate'' particles into the air, generating the ''very characteristic and refreshing aerosols.
