Intellectually, I can deal with other variety meats but my body revolts when asked to eat toilet-stinky andouillette, giblet salad or pig's lung soup. I still crack a sweat at the memory of a perfect set of spongy lungs being lifted, intact and joined, from the tureen of almond soup. (The Age, Australia)
